Cuando hablamos de arroces y de dieta mediterránea hablamos de una larga tradición culinaria. En Guardamar del Segura encontramos maestros cocineros detrás de cada agricultor y pescador. Estos últimos embarcaban a los 14 años, aprendían el oficio de sus padres y hacían el caldero en el barco… ¿cómo se hace un buen caldero?:
“Es posa l´oli a calfar, es piquen les nyores amb all i se sofregeix amb tomata. S´afegeix, aigua, sal i safrà i el peix de caldero rentat amb aigua de mar: Rascassa, llobarro, barragat, etc. Es treu el peix a una platera i s´aboca el caldo a l´olla (paella).
Es tira l´arròs i els llagostins per damunt, un poquet sofregits. Se serveix en una platera. No oblideu servir el plat amb allioli i de beure un bon vi ”.
Este ejemplo representa una de las recetas que encontraréis durante nuestra Semana de los Arroces de Guardamar. When speaking of rice and Mediterranean diet we are speaking of a very long tradition indeed. In Guardamar, behind every farmer and fisherman there is a master chef. Our fishermen went seafaring at age 14. They learnt the tricks of trade from their fathers and that included preparing a top quality ‘caldero’ seafood paella rice on board. And how should you prepare a ‘caldero’? Here’s the recipe, for the bravest of you, translated from the original Valencian:
“Heat the olive oil. Ground the ‘nyores’ red small sweet round peppers, with garlic in mortar. Add water salt and saffron and the ‘caldero’ fish washed with seawater. Rascassa (red sea bream), lubina (seabass), barragato (?), etc. Put the fish away in a tray and all the broth you’ve prepared into a paella pan. Add the rice and decorate on top with ‘llagostins’, our famous Guardamar King Prawns, which will have been stir-fried before. You can serve the fish in a deep dish and you should, of course, drink wine with your meal. Don’t forget to serve the rice on plates with an optional ‘allioli’ sauce. (thick garlic and olive oil sauce)”.
